...But I was planning on pitching on top of an ale yeast cake that is currently in primary for an Irish Red. I know it won't be a true dunkelweizen, but I was just wondering if anyone else has tried this?
 
Wort + Yeast = Beer, I made a dunkle off a yeast cake from a moose head clone, used the cry havoc strain from white labs. I really like that yeast. Turned out great, but I over carbed it. The bottles that didn't turn into bomb where way to fizzy. The ones I had just as it was starting to carbonate were delecious though
 
Oh, I'm doing it. I was just wondering if anyone has had success with it. I made an American Wheat with WLP Cal Ale Yeast and it turned out awesome. We'll see how it works out.
