Using fresh hops

I have been invited to a hb club member's home to pick some fresh Cascade hops. My questions: How are these used? Do they need to be dried? How are they stored? Without an alpha analysis, how does one judge its %?
 
You can either use them very fresh, or dry them. They provide differences in flavor.

Since drying them removes much of they weight, generally use 6 times as much of fresh hops as you would of dried.

If you have no idea of the AAUs (most of us don't), it's common to use them late in the boil for flavor and aroma and dryhopping while using a hop with known AAUs for bittering.

Fresh hops can be sort of grassy and vegetal when used in huge quantities, but they can also make a great beer.
