I am wanting to brew some ginger beer which calls for using champagne yeast. I have several packets that have a best used by dates of July 2012. Should these be Ok to use for a lower gravity brew? The cost of gas driving to the HBS would far exceed the cost of buying a new packet of yeast. The yeast has been in the refrigerator for the last 2 years.
 
I have used expired dry yeast that was stored in a fridge with excellent results. To be safe pitch two packets and you should be fine.
 
Supposedly, dry yeast in the fridge only loses 4% of its viability each year.

You should be fine.

I've used dry yeast that was 3 years past expiration. It was always kept frozen. I made a starter to be sure it was viable, and had no problems.
 
I have a lager going right now that I used yeast that was 18 months past expiration (local shop was giving them away for free since they were expired, BrewFerm brand) and fermentation was pretty strong.
