I did a rather stupid thing being new to brewing. I bought a 25# bag of Montana Prairie Gold hard white spring wheat at the local Walmart. I thought I could use it for brewing in some fashion, after a little research it appears I may have purchased a non usable product. :eek: Has anyone used this for brewing and if so in what capacity. If you have any suggestions I would like to hear them, Thanks!
 
Your gonna have to cook them, or do a serious protein rest.

Using raw wheat for wits usually involve doing a separate "cereal mash" with some 6-row or other grain with a lot of diastatic power. One would do a protein rest, a sacchrification rest, then boil it for a short time to free more of the starch up. This is added to the rest of the mash later on to finish converting.
