Most of my beers are 1.060 or higher and I typically drop 2 packs of US-05 in. I am a happy brewer. But the price increase $3+ made me take another look at Nottingham.

That irks me. Tell me they didn't start to gouge us when the Nottingham problem popped up? Grrr....

IMO, Nottingham mutes the hop character too much for my American ales. So I'm stuck with the $3+ US-05.
 
definatly a fermentis fan in general i use us-05 more than most but love to use the s-33 when ever it fits all aroundtheir yeasts are easy to use and effective

I too love us-05. I tried notty after hearing all these raving reviews, and after 2 beers with no fermentatino after 84 hours I will never use again.

Now, you mention s-33 which I feel is often underappreciated. I love s-33, in fact I often use it in place of us-05 when I am looking for a slightly different character. I made an amarillo APA with S-33, and it was by far the best beer I have ever made (all gone now).

On topic, has anyone tried using HALF the packet of US-05 and saving the other half for a second brew? I do this and it works great. Of course, only on the 1.060 or lower beers. Half a packet of cells is PLENTY, imo.
 
US-05 saved my Arrogant Bastard clone when Pacman stalled! I think I let the temps get too low and Pacman gave up leaving the gravity at 1.040. I pitched a packet of US-05 to see if it could help and it took the gravity right down to ~1.013. I love using US-05 for APA and IPA. It's nice and neutral and works like a charm. It has replaced Nottingham in my home brewery.

what temp were you at with the Pacman and what was your starting OG and did you make a starter?

I have used pacman at 60F with no troubles, it's a monster.

I wonder about your temps too....I just had pacman take a 1.091 IIPA down to 1.010 at 60 degrees in about 7 days...
