Well I have limited brewing time with my work schedule. So basically I have get home on the 17th of November, this Thursday, and I fly back to work tuesday the 22nd. So I have basically 11 days to get something together. I usually send all my beer to a buddy of mine who kegs, then bottles it for me in a few days. If I could get my brew to him by the 19th he might be able to bottle it and I can pick it up the 21st before I leave home again. I have two "brew house" Oktoberfest kits I'm gonna try out. Can it be fermented in 9 days? I know it's really pushing the limits. I might even be able to drop it off to him on the 21st before I leave and he bottle it up while I'm away and I can pick it up when I return on the 23 of dec.
So the big question, can I ferment these brewhouse kits in as little as 9-11 days? I thought I read on here if you keep the tmps up in the higher range fermentation goes a lot faster but I can't seem to find anything on it now. Any help would be greatly appreciated!
