Well I have limited brewing time with my work schedule. So basically I have get home on the 17th of November, this Thursday, and I fly back to work tuesday the 22nd. So I have basically 11 days to get something together. I usually send all my beer to a buddy of mine who kegs, then bottles it for me in a few days. If I could get my brew to him by the 19th he might be able to bottle it and I can pick it up the 21st before I leave home again. I have two "brew house" Oktoberfest kits I'm gonna try out. Can it be fermented in 9 days? I know it's really pushing the limits. I might even be able to drop it off to him on the 21st before I leave and he bottle it up while I'm away and I can pick it up when I return on the 23 of dec.

So the big question, can I ferment these brewhouse kits in as little as 9-11 days? I thought I read on here if you keep the tmps up in the higher range fermentation goes a lot faster but I can't seem to find anything on it now. Any help would be greatly appreciated!
 
you're bottle conditioning? good luck! higher temps are going to give you some funky flavors. i dunno man. i brewed mine back in june and am just sipping one now. 9.5%....:drunk: what was this thread about? :p
 
It can be done but you wont get any guarantee's that it will be done. You also don't get a guarantee that it come outs as intended.

Crap shoot.
 
It will sit in bottles for 3 weeks before drinking. I always start drinking my beers as soon as 3 days after I take it from secondary. Filter right from the secondary and bring it to my guy, he bottles it and I have it back and drink 2 days later. It's good. Would it be better if I let it condition for a few months? Definitely, but I don't have the space or the time to brew enough to get a pipeline going.

Back on topic, I'll put it in primary and put my brew belt on it see what happens. Instructions say primary for 3-5 days and secondary for 7-10. If it doesn't come out quite as good as it should its no big deal, it beats drinking coors light during the holidays lol.

Anyone else with some input?
