What is the best type of water to use when making wine?

H2o works pretty good. Usually I just use tap water. Sometimes I will use spring water if I buy a new fermenting jug filled with it.

filtered or spring water would probably be the best but tap water usually works just fine, honestly well water would be pretty awesome too.

Not distilled.
Really, tap water is fine ... though ideally you want non-chlorinated water ... or for that matter, if your tap water is chlorinated - then water that has been treated with sulfites (campden etc) to neutralize any chlorine and chloramine.
You could also use a carbon filter instead to remove the chlor.
