Constructing a recipe for a Red Ale, but having trouble settling on the hop.

Here are the hops I have at the moment.

Cascade
Chinook
Goldings
Saaz
Tettanger

Leaning towards the Saaz or the Cascade.

Thanks!

None of these are technically to style for an Irish Red. Irish Red would have more British hops, like EKG or Fuggle. But, you could use the Cascade and Chinook and make more of a West Coast style red/Amber ale. You could do something like Ken Lenard's Home Run Red, and use the Tettnanger.

If you want to make the Irish Red according to style you would have to use an English variety of hops. The only English one on your list is Goldings. Saaz and Cascade would produce a good beer but it would not be authentic. Which ones should you use? Depends on how authentic you want the beer be. My personal preference most of the time is to brew beers as authentic as possible. Others do not follow style guidelines closely at all. Which is correct? They both are. There is plenty of room is the brewing world for both approaches
