hey, i use an aluminum brewpot, just wondering if I could let some stout wort cool down in it overnight for about 8 hours? ive just heard that stainless steel can cause things to go sour if they sit in it long enough?

also, can i use an iodine sanitizer on my aluminum brewpot so i can use it to pour my finished beer into for bottling?
 
Not sure about the sanitizer in the aluminum brew pot, but as far as cooling overnight in aluminum: I personally would never allow wort to cool for 8 hours, period. WAY too much exposure to the air, seems to be begging for an infection.
I don't have a chiller or anything, but i can get 4 gallons of wort down to 70 degrees in 35 min. I place the pot in my kitchen sink, and then dump ice all around the pot, then fill the sink with cold water, to JUSt BEFORE the brewpot starts to float (LOL). I only have 3 ice trays, but I use those along with some tupperware (to make ice blocks) and build my supply over the course of a few days, storing it in a garbage bag in the freezer until brew day. Another trick which i have yet to try: fill a couple of 2 liter plastic soda bottles with water and freeze them. Be sure to sanitize them with sanitizer after you remove them from the freezer!!! But you can place them right IN the wort to help cool it.
 
thanks, yeah thats why im afraid of leaving the wort out, i was going to keep a lid on it, but still it wont be air tight.

id definitely do a sink ice bath, but... my conditions are so primitive i basically have no source of ice. even from any store that id know of. ill probably do as many cold water exchanges as i can and a little wait, maybe let it cool down in the carboy overnight so its sealed up


also i think i heard that iodine will react with aluminum. so im a bit worried about that
 
When I heard you were going to leave it out for 8 hrs, i jumped to the conclusion you might be new to brewing. I did that to cool my first batch.
Therefore, I thought i might offer suggestions as to how to cool it quickly....and never really answered your question....whoops! Sorry!
 
From what little I have read, those that do a "no chill" brew method they put the wort into airtight plastic containers. I would think that is probably the best way to go if you have to keep the wort for several hours before putting it into a carboy/fermenter.

I am not sure about the iodine in aluminum either. I know about bleach and percarbonate (oxyclean/PBW) cleaners are not good but I would not take any chances even with iodine.
