I have a American Wheat Ale that I've submitting to a few competitions and it's done quite well. Placing in multiple comps and avg around a 39-40 score.

It's pretty simple:
50% - Wheat
42% - 2 Row
4% - Lt Munich
4% - Golden Naked Oats

15 IBU of Nugget - FWH (1 oz)
2.5 IBU of Czech Saaz @ 15 (1 oz)
2.5 IBU of Hersbrucker @ 15 (1.25 oz)
1 oz of Saaz @ flame out
1 oz of Hersbrucker @ flame out
.5 oz of Cascade @ 2.5 day dry hop
.5 oz of Hersbrucker @ 2.5 day dry hop

Then a light dry hop of Hersbrucker & Cascade.
What I would like to do is make it a little more "American" by substituting the Hersbrucker with Amarillo, which I know is powerful, so balancing it with a 30 min addition of Sterling. But I've never paired the 3 hops I'm considering. How does the following look. Same malt bill, just swapping hops and timing. Smaller bitterring addition to compensate for the higher AA% of Amarillo.

5 IBU of Nugget - FWH (.25 oz)
5 IBU of Sterling @ 30 (.50 oz)
7 IBU of Amarillo @ 15 (1 oz)
5 IBU of Cascade @ 15 (1 oz)

1 oz of Amarillo @ flame out
.5 oz of Cascade @ flame out

.5 oz of Amarillo @ 2.5 day dry hop
.25 oz of Cascade @ 2.5 day dry hop
