Thoughts on my Fall Cider recipe?

5 gal of pasteurized unfiltered no additive apple juice

1 gal cranberry juice

2 pounds light brown sugar

6 pounds of fresh mission figs, frozen the night before and pureed the day of.

A couple bay leaves

A few cinnamon sticks

Fermentis SafBrew HA-18 (25 grams)

I got most of the recipe from an older post. What do you think? I was almost going to add oranges or currants, but idk if that's too much.
 
IMO:

stick with motts or apple and eve . it makes better cider than unfiltered juice i dont know why .

why the bay leaves?

one cinnamon stick or less . that stuff is powerful.

ale yeast makes the best ciders for me.

add acid in the form of lime juice. 1 lime per 2 gallons about

add tannin in the form of strong black tea. ( a few bags in 1 cup of water steeped for 20 mins. )

dont add more stuff. less is almost always better (except when hopping up an ipa - lol)

Thanks! The juice is Mott's, but it's like their honey crisp or something. I already bought it, but next time I'll try the regular stuff.

The bay leaves were just for a little kick of spice.

I forgot to add that I got Irish breakfast tea as well. Was gunna make a strong cup and dump it in.

I have some key lime extract laying around. Maybe I could use that. But maybe I will just buy a lime

I chose the yeast because it's super sturdy, and gives flavors of clover

You would leave out the figs?
 
the figs are interesting and i have no idea how that would taste or work but i like it and its worth a try,

that motts will work. i also liek to add pectinase to my ciders to clear them well.

stay away from key lime extract it may have preservatives or artificial flavors or something. stick with fresh lime juice.

i have a beautiful cherry apple cider on now that looks amazing. it just needs a little time to clear some off flavors.

it has a slight soapy smell that goes away when i degass it,.

this has happened beofre so i am not worried. time heals it usually.
