Hi all,

Please help calm a newbie's mind. Have had my first all grain in the fermenter (temp controlled at 18C) for 11 days. Opened it up for the first time and it still has a thick krausean (sp?) layer. I've just read I could give it a shake to help loosen it up? Should I do anything or just leave it? SG been steady for 3 days. Was going to start a week long cold crash on Sunday anyway.

Looks like it isn't done yet by the bubbling. Not uncommon for a beer to take a couple weeks to finish up & start settling out. Be patient a few more days,even though you say it's done. Doesn't look like it from the size of the bubbles. I'd ecpect it to be tighter bubbles at this point if it was done.
 
Looks great. Now put the lid back on before you mess it up. :) Nothing good comes from rushing beer, so just let it ferment unt its done.
 
looks like US-05 , if you feel it is done you can cold crash it and will drop

I have a blonde that looks just like that but I skim 05 to collect it to use again

Just by way of an update, and to say thanks again to everyone - the top layer started to drop yesterday!

Going to cold crash for a week at 0 C and then bottle.

Give that beer a few more days where it is warm before you cold crash. Your krausen may have fallen but the yeast need some more time to clean up byproducts. Never rush your beer. You'll regret it because you get weird flavors from rushing it. Here's an article about how the yeast work. Even though it's dropping the krausen,it still looks like it'll do some clean up over the next couple days. I always give it 3-7 days to do so. when you see it settling out clear or slightly misty,it's ready for packaging.
