i recently got 5 of these thermometers so i can monitor the temp while fermenting so as not to run into trouble like i did recently when the weather got too hot

will i push these in the wort through the rubber bunk and the air lock?
is it ok to do so or will it let some air in?

whats the best practice for these thermometers

You can also tape them to the outside and cover with insulation. Run a test using ur fermenter filled with water and a probe taped and one inside to see if you get much of a difference.

Using a thermowell or taping the probe to the outside of the fermentor are your two options.
The cables above the probe are usually not water/wort proof. I would opt for taping and insulating the probe to the outside of the carboy for the simplicity.
Some brewers have tested the accuracy of this method. They found accuracy to within 1°F compared to a thermometer/thermowell in the center of the wort.
I use a brown paper pocket taped to the carboy to hold the digital probe.
