Yeast: The Practical Guide to Beer Fermentation (Brewing Elements Series)by Jamil Zainasheff
 
Probably, Jamil has lots of good things in regard to beer knowledge. He has a ton of podcasts and such out on the interwebs as well.
 
Actaully it is by Chris White (of White yeast labs) and Jamil Zainasheff This brings the yeast end of things, as that is Chris Whites buisiness together with the brewing end of things - more Zainasheff's area of expertise. (this is not a dig against either, just saying that the other knows more about a specific area).

The book is good and enlightening. It also makes reference that it is for from homebrewers up to craft brewers. So some bits get a bit esoteric for the average homebrewer.
 
Its a great book. My only complaint is it is written to cover a mix of homebrewing & pro-brewing aspects of yeast management. I am in no position to judge the pro-brewing side of the equitation, but this dual-coverage means some of the homebrewing stuff is thinly covered.

For example, it is now clear that the yeast yields quoted in the book for stirred starters under-estimate the number of yeast produced by upwards of a factor of 1000.
