easiest i've ever done is a cider though, no cooking, less time than wine. CO2 makes it sparkling. no additions, just juice and yeast. stop, backsweeten, keg, bottle. crisp clean refreshing. take some off for vinegar too for health reasons. :)
 
The cider I made I had intentions of backsweetening but I bottle and the result was nearly 2 cases of bombs.....I did not have a chance to pasteurize
 
However I do have currently about 4 gallons left I might backsweeten and keg. BUt i need fridge room. Although with temps I could leave outside I am sure.
 
I have another 12lbs of homey and want to make a sweet mead, my last one was dry and it was good but I can't really stand dry wines.

Morris Society of Homebrewers are you a WHALES member?

If you are a Whales member try to get your club to enter the other NJ comps to win the Homebrew Club of the year award! Hopefully we will win that again but last year we dominated that...and by a lot. But it would be fun to have other local clubs get in on it.
 
I actually see that WHALEs is currently 2nd place with 34 points. Get in on that!!! Granted I dont brew as much as other members do but the other members enter a lot of beers as well!
 
We meet every 3rd Tuesday of the month at a local bar or brewery then we have member only meetings as well for paying members plus then you get in on the bulk purchases we make as well
 
I found my brewing stepped up a bit once I attended these meetings.
 
Last year was the inaugural Homebrew Club of the Year and we accumulated 232 points in 3 competitions. The 2nd place had 68. I hope this year its closer
