Just a small update of the coopers dark ale. Those Bottles were opened literally on that date of the two week carbonation process. I let my father try one of the Coopers dark ale only a couple of days after, and it had a much nicer head on it as it was poured in a smaller glass. So perhaps the longer you let it sit in the bottles, and pouring it in a glass that is better suited for beer makes a difference. Honestly, it really is a nice tasting beer came out really nice and I'm eager to see what a little age does to the brew. It has been my limited experience that time can do wonderful things to a good brew.
