I am bouncing between just going ahead and freeze concentrating it or actually admitting total defeat and adding beano. I think freeze concentrating it as-is would ruin it. I think adding beano would ruin it.
It is really just a matter of which would ruin it less.
On the beano front... and I've said this before... i just can't fathom that it is out of fermentables. i mashed EXTRA long and at a really low temp to try to get as simple of a sugar as I could get... and there is a ton of sugar still left in there (1.078ish). (so sorry... about 17% ABV... not `17.5%)
