I have my 3rd batch, a IIPA, cold crashing right now. I added gelatin today and holy crap my beer smells amazing. When I took my FG reading before dry hopping the sample tasted great. I am planning to bottle this weekend and waiting for it condition is going to suck SSSOOOOO bad. This is the worst part of this hobby.

Sucks , doesn't it?

Get a big pipeline going and it is easy. I have a big supply and I never seem to have to try to rush a brew. I sometime forget what I even have in my fermenters.

Well I was gonna bottle tonight but apparently I didn't buy dextrose last time I went to my LHBS like I thought I did and they're now closed. Oh well, one more day won't hurt it. Been dry hopping a week and cold crashing since Sunday.

Use table sugar. Works just as well. I religously used corn sugar, until someone suggested using table sugar. I was unsure, but tried it. I've used table sugar for everything since. I still have a few lbs of corn sugar from a few years ago that I really should use up, but I really feel plain table sugar is a better product.

It is also cheaper, and more readily available.

I've heard table sugar can cause a cidery flavor if used for priming. I used it on my first batch, a mr beer "American light" kit, and noticed a flavor I would call cidery but I'm not 100% sure that was caused by the sugar at bottling. My IIPA flavor is probably strong enough to over power any of that flavor I would think so maybe I'll give it a try.

http://beersmith.com/blog/2011/12/22/beer-brewing-myths-holiday-episode-beersmith-podcast-29/ - watch that as an insight to what sugar does to a beer, in a word... sugar doesn't add a cidery taste at all.

when a recipe calls for corn sugar, i just use cane sugar as well, beer comes out just fine :) no apple flavors at all.

use that as well for all sorts of different sugars.

Good luck! :fro:

Thanks for posting that. I'll have to watch it later as I'm at work but I will for sure.
