My wheat beer has been in the primary for 2 weeks in a water bath that I have kept around the mid to upper 60's. I'm thinking about transferring it to a secondary on top of some fruit (strawberry or rasberry).
My question is that after I transfer shoule I keep the temperture at the temp. I had before or can I keep it at room temperature? Room temp. is around 78.
 
wheat beer and fruit beer are among the types of beer that lose their flavor most quickly (along with hoppy beer and lager). i would recommend 65 to 70 degrees if possible.
 
Seconded. I recently did a strawberry blonde - 65 in primary for 2 weeks, on to fruit and 65 for 2 more weeks.
Came out very nice.
