Good day all,

I have two batches going, one in primary (four days now) and one in secondary. I am going out of town in a couple of days and will be gone a week. While away, we're going to drop the thermostat to probably 55°. Is this going to mess with the fermentation? I'm not too worried about the beer in secondary, more concerned with stressing the yeast in primary.

Anyone have any experience with this? Average fermentation has been about 66° for both batches.

If you drop the thermostat to 55º then do you know what room temp will be at night? You're getting 70ish temps now but at night you get down to the lower 40s if you're in the LA area. I wouldn't be too worried overall. I would find an inside room or closet that is dark and leave the beer there.

If you've had beer in primary for 4 days as of today and you're not leaving for another couple, chances are you are clear from any initial esters you could get from high or low temps. I left town when it was about 75-85 out still and my beer was still okay. It was already done, I just wanted to let the flavors meld a bit more.

I'm visiting LA. I live and am brewing in Buffalo. So the furnace will still be working to keep us at 55.
