As far as the transformer goes, if you half the input you will half the output. The relay circuit is getting ~6VDC . I have replaced the relays and it has been working without issue.

I think the 5v regulator is a simple linear one and at around 6v, it might be cutting it close to dropout, but if it works reliably then if anything, you should spare the regulator a bit.
 
I was worried about the 5V regulator at first. The voltage coming from the secondary voltage is close to 7V, so I am right on the edge of dropout I believe. I have not had any issues and the unit has been running great on bench testing.

Replacing the transformer is expensive compared to the relays, which I got for ~.50 each. This is a fun little controller to play around with I have added a tri color LED to make it easy to see which output is active, at a glance. I commend you on your program as well. When/ if I put these on ebay I will make sure to donate some of the proceeds to charity.

I'm no expert but I believe a regular 7805 needs around 6v on the input side, so if it is closer to 7v it should be fine.

Absolutely. And yes, I've come to really like these little suckers myself. If I could have made any changes to it, I'd like to have seen at least a one up on the MCU and a full digit in the leftmost place on LED display. But really, they are very good at the cost. Very robust and thought through design.

I have been working on a Atmega based controller using DS18B20 temp sensors. I need to get back on it, being summer I have had to keep the yard up and such so I have not had much free time for tinkering.
