I am on my first batch. Extract German alt recipe. Fermentation started fine, but died down quickly. I transfered to my secondary on day 3 (I know now that was too soon), and it has been in my secondary for 9 days. (12 days total). All fermentation activity seems to have stopped. I do not see any bubbles in my airlock. I got a reading with my hydrometer today and it was at 1.012 which is what the recipe said final would be. The only problem is when I tasted the sample I took, it had a really bad skunky taste.
Should i go ahead and bottle? Will the taste mellow with aging? Any help would be appreciated.
