I am on my first batch. Extract German alt recipe. Fermentation started fine, but died down quickly. I transfered to my secondary on day 3 (I know now that was too soon), and it has been in my secondary for 9 days. (12 days total). All fermentation activity seems to have stopped. I do not see any bubbles in my airlock. I got a reading with my hydrometer today and it was at 1.012 which is what the recipe said final would be. The only problem is when I tasted the sample I took, it had a really bad skunky taste. :confused:

Should i go ahead and bottle? Will the taste mellow with aging? Any help would be appreciated.

I would say if you practiced good sanitation, then you should go ahead and bottle and wait....(wait)...wait a few weeks and try it again. I only have done 5 batches my self and I also have not been to fond of the taste after the initial ferment. but they always seen to work themselves out!

oo yeah leave it in the secondary for a few days and check everyday or so and see it the S.G changes. if not then bottle! Its probaly just Green ( young/not ready) beer!

What is the target S.G.?
 
don't expect green beer to taste good. Bottle it if you're at your target SG and give it a few weeks. My first batch took 3.5 weeks in the bottle to get rid of the sour/sharp taste it had.
 
Heh. How about this, I still have some of it around. It was never very good, I never even drank a full one of the first batch...
 
Your fine, they never taste even close to what they will after a little aging in the bottle, I am still new so I still have trouble drinking it to soon, but seriously, every day it tastes better and better, so no worries, just get your priming sugar in there and bottle it up. Little tip, get a lot of extra hose for you siphon when you transfer to your bottling bucket, let it coil at the bottom of the bucket, it will mix up your priming sugar really nice without having to risk anything by having to stir it, and of course sanitize everything :D. I must admit that i have a honey wiezen now that is about 2 weeks in the bottle and I amstill not to crazy about it..( keeps me from just drinking it) I am new also..but you have to give things time (time) ...that is the best thing I have learned off of this fourm!
