I have a 5gal batch quad and I'm going to rack to secondary in a week and add tart cherry concentrate and oak chips soaked in bourbon. I was wondering how much of each should be added to have light taste of each, more than a hint, but less than a wow cherries and bourbon?!?!

The concentrate says 1oz=80 cherries which I've looked around and 80 cherries seems to be about a 1#.

As for the oak chips, I was thinking 1oz of medium toast american soaked in 8oz of devils cut for a little more barrel flavor.

Would just like some guidance? Thanks for any help
