This is my wife's favorite commercial beer ,but not right now. She is pregnant with our 1st daughter and when she is ready to start having some homebrews again, I want to have this ready for her. Any input would be wonderful, please let me know what you think of this recipe so far:
8# crisp M.O.
6oz C40
4oz C120
1.5oz Roasted Barley (550L)
1 oz EK Goldings 60 min
1 pkg Wyeast 1084 (Irish Ale)
OG 1.049
FG 1.012
IBU 22
Color 14
Looking to mash at 155 for 60 min and sparge as usual. Eventually Keg with about 2.2vol CO2. Let it sit for about 2 months. We are due Sept 3, so if I brew this around 6/3/10 I should be fine.
ONE QUESTION THOUGH: what can I do to ensure this has enough body and head to stand up to smithwicks??? Am I on the right track???
