Hi -looking for suggestions - here are the parameters:

This is a pre-packaged, 1-gallon mix from Brooklyn Brew Shop that I bought a while back for my oldest son; he's just now getting around to brewing it.

It is described as a "West Coast Golden" Strong Ale, which I take to be a straight-up, basic Belgian Strong Ale with American hops; in this case, Cascade hops.

The grains are fine, I am sure, but the hops and yeast are long gone. I have a spare packet of yeast, so no worries there, but my dilemma is the hops. I know that it uses Cascade hops, but am not sure as to the amount I should use.

The instructions provide the times to add the hops, but not the amounts, other than that they are equal amounts for each addition.

What I need are suggestions for the amount of hops to add at 60, 30, 10 and knock-out.

The goal is a fairly well-balanced beer that is not over-the-top hoppy where bitterness, aroma and flavor are concerned.

Thanks in advance -

Ron

We have some extra packets of the standard yeast that Brooklyn Brew Shop uses, so I intend to use one of those. It is a basic, fast-acting yeast that seems to work really well for all-around brewing. I am guessing that it is similar to Munton's dry yeast or perhaps US-05, but am not 100% sure.

Good news on this front -

I contacted Brooklyn Brew Shop and they promptly replied with exactly the information that I need:

Brooklyn Brew Shop said:
You want to use around .5 ounces of hops total and split them up as the instructions state. IBU's should be 27.3.

"As the instructions state," the hops are divided evenly and added in four additions: 60, 30, 10 and knock-out.

Based on this, I have a plan and we will proceed forthwith, hopefully this weekend.
