I'm about to pitch Safale S-04 in 6 gallons of juice. I added the capden tablets and pectic enzyme about 36 hours ago.
I'm thinking about adding a combination of Turbinado sugar, Morena sugar AND two different types of honey. Is there any downside to mixing the fermentables like that? I figured it would add to the complexity and perhaps create some interesting flavor notes I wouldn't get from just table sugar.
I was also thinking about adding a small handful of dried plums from my backyard plum tree. Perhaps as nutrient and also to add a little something to the flavor.
Any reason why I shouldn't do that?
I plan to bring the starting gravity up to about 1.062 for an estimated ABV of 9%. My last batch of Safale S-04 turned out absolutely great with just the right amount of alcohol but still some level of sweetness and nice apple taste/aroma. I don't want to mess with it too much but I figured mixing up the sugars couldn't hurt. And what about the plums?
Going to do this today, so let me know if I'm about to make a horrible mistake! This batch of juice is some of the sweetest, tastiest I've pressed in years, so I don't want to blow it!
