I started a brew of Perry last night, using freshly juiced pears (juice was pasteurized at 160 F for 2 minutes). The original gravity was about 1.070; however, I’m not sure how accurate this reading is due to the amount of pomace in the suspension. The original reading was 1.060 with sediment, but I added about a kilogram of sugar to the 24 L brew and retested it again after straining through a paper towel. The result was the 1.070 reading. I used one packet of KV – 1116 to inoculate the brew and then let it sit overnight.
This morning I moved the fermenter into a different room and figured I would take this opportunity to aerate the suspension. I swished the brew around in the bucket and ended up coating the inside of the lid. I’m wondering if the pomace mixture that is stuck to the lid will pose a sanitation risk? Or if the CO2 trapped inside the fermenter will inhibit microbes from growing until I can rack it to secondary.
Additionally, before I aerated, I wanted to release some of the initial gases from the fermenter so I pressed on the lid. I realize this was a rookie mistake as it created a vacuum and sucked in some of the liquid from the airlock. The liquid was starsan solution that was mixed the night before and put into the airlock. Only about 15 mL of liquid made its way into the fermenter. Does anyone have experience with this happening and if so, did I contaminate the brew or should it be OK because it was starsan?
