Im going to start a batch of strawberry wine soon and wanted some feedback on yeast selection. Im looking for 12-14% ABV and good fruit favor. I have on hand:

EC-1118; Premier Cuvee; Premier Blanc; Montrachet

Will any of these make a good fruit wine? Or do I need to make a trip to the hbs. Thanks
 
I've been playing with Montrachet lately, it claims to die off at 13%. If you get you sugar content high enough you should finish with something of dry to semi sweet.

I'm only about a week into this test so nothing to say about how it actually finishes, yet...
 
I just got done with a 6 gallon batch of strawberries and used Montrachet. I ended up with 13% and it has a great flavor. I would just suggest using more strawberries then you think you need. I used 14lb and it seemed to still be a light flavor
 
Any of those yeasts should give you excellent results. Montrachet has higher yeast nutrient needs, so you would need to add more DAP in the last third of the fermentation to prevent H2S production.

I have a batch of strawberry going this week and will be using EC1118. I like this yeast for fruit wines because it simply lets the fruit flavors shine through and is a strong fermenter. I am a fan of using no water in my fruit wines. Just straight fruit. This concentrates the flavor and makes a delicious wine. Of course, this means using 10lbs of fruit per gallon.
