So, 3 weeks ago, I brewed a 5 gallon stout (extract brew). Everything went well. My brew partner and I wanted to add chocolate and bourbon flavours, so I picked up some cacao nibs and a bottle of the hard stuff.

I roasted 6oz of nibs at 300 for 15 minutes, put them in a tupperware, and added a cup (8oz) of bourbon. First off, the nibs have absorbed quite a bit in only a few hours. Should I add more bourbon? How long do I let this soak? Just dump the whole thing in a fermenter, then rack on top?

Thanks in advance!

You're just making a flavor/aroma addition. After 3 weeks in primary, attenuation is almost certainly complete. Add the bourbon soaked cacao nibs to the primary and give it 3-5 days before bottling or kegging.

How long do I wait before dumping the nibs/bourbon concoction into the primary? 4-5 days?

Something you may want to try on the next batch.
I soak mine for 2 weeks while the beer is fermenting. After fermentation is complete I add the nibs and bourbon to the fermenter and taste it after about a 5 day soak. If it's not strong enough I let it go longer.

To be completely honest with you 6 ounces of nibs seems like a lot to me. I would probably taste test that one at 3 days to make sure it isn't too much.

I may only use 3/4 of it in the batch. I don't mind a stout that punches my face
