Storing DME

K, i just brought out my coffee can of DME to make a starter, and the thing was rock hard.. (it is about 10 months old)

was it just past its prime? or did i store it wrong? It may have been in the freezer for a few days.. lol
 
I keep it out of the freezer. When it's freezing cold and you pull it out of the freezer, the water just wants to condense in there immediately when you open it up.

I have a big screw top jar I keep mine in. Seems to be working fine so far, only time will tell.
 
I double ziplock in gallon bags. they hold really close to 4# per bag.

I do the same, and it lasts for a LONG time that way.
Also, if you try breaking up your clump, say by putting it in a ziploc ant hitting it with a hammer, it will still be usable.
 
Your coffee can leaks.

I have DME stored at room temperature in ziplocks in a tin can that's over 10 years old and still good.
