Storing bottles of beer

Howdy!

I've been using the Cooper's kit to brew beer and bottled up an Irish Stout after sitting for about 5 weeks and let it sit in bottles in a cool dark place for about 3 weeks. So, I've put some in the fridge and tried it (I think it's pretty darned good) but now I'm wondering if I should store the rest of the bottled beer in the fridge or if it ok to sit out? It's in the basement and is about 65 degrees and in a dark place. Will the beer go bad or get weird if it is not refrigerated or is it ok?

Beer will be fine stored at room temperature. It's best if chilled for a day or two before drinking, but long term storage at 65 degrees is absolutely not a problem.
 
hops are a preservative and thats why we use them in our beer or else it would spoil alot faster...either or would be fine just keep them in the dark. light will 'skunk' the beer.
 
Once the beer is carbed & conditioned to your liking at room temp,then you can put'em all in the fridge if you have room. but one 5-6 gallon batch is 48-64 12oz bottles. That's a lot of room needed for one batch alone...
 
Long term storage of beer at room temp is fine, as everyone else here has stated. But, the colder you can keep the beer the better as it keeps the yeast from working on any sugars that may still be in the beer, and help to slow down the degrading of some of the compounds in your beer that will turn into off flavors.

You won't make off flavors over time that aren't there already. But the hops flavor/aromas will degrade over time,& malt flavors aren't as crisp or complex in my estimation. Keepnig them all in the fridge will slow down the degredation process so the beer will last longer.
 
I was wondering the same thing. But if we leave the beer in the closet does it continue to carbonate? Will it over carbonating?
 
No it won't keep carbonating. It can't. Once the priming sugar is converted,that's it. done. Yeast can't eat the long chain sugars that make color,flavor & aroma. It'll just degrade faster than being in the fridge.
