Hello all!
I will be bottling a stout this weekend and bottling a marzen/bock style in 2 weeks. I'll end up with about 100 bottles of beer. The stout should end up being about 6.6% and the marzen/bock about 5.8%.
I plan on leaving the stouts at cellar temp which is 61 F and only likley to go down as we move into winter. The marzen/bock I was planning on lagering in the bottle in the fridge for a few weeks.
So my questions are:
Can I just leave a 6.6% stout at 61F for storage or will it reduce shelf life too much? Should I pop that in the fridge too?
Do I need to keep lagered marzen/bock at 5.8% in the fridge or can I move it back to the basement after lagering?
