Hello! Thinking about getting into Spunding so I can try naturally carbonating my brews.

Right now, my carb process for lagers is typical and simple...pitch and ferment at 50ish (in a glass car boy), slowly ramp up temps into a D rest (usually 10-14 days total), rack to secondary, slowly chill to lager temp, lager at 40 or lower for at least 4-6 weeks, transfer to keg and turn on co2 for at least another week or two.

It’s my understand that the process of Spunding requires you to rack the beer to a keg near the end of primary fermentation and apply the Spunding valve to carbonate. I haven’t been able to find too much more information online than that however. I really like to naturally clear my beer through cold extended storage and then racking off a second time to avoid picking up the stuff that settled out.

If you use the Spunding valve, do you transfer to a serving keg after lagering? I use a basic siphon when racking, is that not advisable with Spunding? I would assume not because the co2 would be lost? Do I need a counter pressure device to rack then? Are there clarity issues with Spunding? Any info would be greatly appreciated! Thanks!
 
Do a FFT with beer pulled from your main batch about 16-24 hours in, which will give you terminal. Then take periodic gravity samples and rack to your spunding vessel when you have about 4 points left (for normal, "full" corny headspace). Give it a couple more days to carbonate and then chill.
