Hey Brewers,

I have a question? I am getting ready to brew a spiced ale Old Fezzi Wig style. Ginger, Nutmeg, Cinnamon. And Orange zest. I am just not sure how much spice to use for 5 gallons. Any thoughts?

For the ginger and nutmeg I would do 1/4 to 1/2 tsp for 5 gallons. Cinnamon I tend to use in sticks, start with one. You might want to add more later on but it's better to start low and tweak up in your next batch if you so choose. It's easy to add too much and end up with a beer that tastes like your daughters first attempt at baking haha.
