Hey guys and gals, I started collecting the dregs from a few sours I had (Boulevard Lovechild, Boulevard Saison Brett and Boulevard Foeder Project) and I have a few questions.

I made a 750ml starter at ~1.020 OG and just put it in a 1000ml mason jar. I did not account for the volume of the dregs and it is now almost to the brim. I cold crashed it after 7 days hoping I could decant and transfer it to a growler in order to have enough room to continue stepping it up.

By decanting off any of the liquid, am I going to lose a significant amount of the Brett and bugs I'm trying so hard to propagate, or should I just pour it all into a sanitized growler along with some new wort? For the next step of wort I will use OG 1.040.

Also, I won't be using the dregs/starter for ~4 or 5 weeks so I'm hoping that is enough time to build up enough Brett and bugs to get me a nice sour. How many times should I feed it throughout the 4-5 weeks, and will that length of time be alright to leave sitting out at room temp with a foil 'lid' on it, or should I throw an airlock on and put it in the fridge?
