Trying my hand at making my first recipe. My buddy and I went to our LHBS last week to get ingredients for his brew. A customer had his S'mores stout which we tried and both enjoyed. Here is what I came up with.
7lbs Maris Otter
14oz Chocolate Malt
14oz Munich Malt
10oz Crystal 80
8oz Flaked Barley
8oz Flaked Oats
8oz Smoked Malt
6oz Biscuit
6oz Roasted Malt
3 boxes Graham Cracker
BIAB 75 minute mash at 151°.
1.5oz Fuggles @ 60
1lb Lactose @ 10
1lb Meadowfoam Honey @ 10
1lb D-90 @ 10
1 packet S-05
2 Vanilla beans @ secondary
1 tsp cinnamon @ secondary
4oz Chocolate Nibs @ secondary
Ferment @ 65 for 2 weeks
Secondary @ 65 for 2 weeks
Cold Crash @ 34 for 4 days
OG is coming out a little higher than I would have liked because of the honey and candy syrup but I think they are good additions. Meadowfoam has vanilla marshmallow taste and the D-90 has a chocolate taste and gives it a little bread taste which with the cinnamon I'm hoping gives it more of a graham cracker taste. The reviews I have read from others peoples recipes is they don't taste enough marshmallow or graham cracker.
