A few friends and I want to try a small experiment and was wondering how long it should take to reach 11.546 ABV :drunk: with a target OG of 1.092 and a target of 1.005 FG fermenting at 65 deg F. I will also be keeping this a still cider and back sweetening as per the recipe.

I planned to substitute the 2lbs of dextrose up to a total of 5lbs

I also planned on substituting the yeast for Lalvin EC-1118

Anyone have a rough estimate of the timeframe?
 
Not sure how long but lavlin will be very dry and kinda tasteless. If it was me I'd use a beer yeast then when the fermenation was 1/2 to 2/3 done I'd pitch rehydrated 1118 to ensure complete fermentation.
