Single hop, single extract ideas?

My next batch is going to be Maris Otter LME (although the extract my LHBS had is only 70% MO with the rest 2-row, I've seen some online that are pure MO, though...) and Mosaic. Shooting for a slightly hoppy blonde ale to be my go-to lawnmower beer for spring.
 
How about a Munich Malt Extract and Citra hops? The Munich should give your beer a bit of complexity and the Citra will get you a citrus/mango flavor.
 
Hmm both sound like great ideas, I think i'm going to have to place another order for more extracts and hops.

What do you guys think about an amber and goldings or amber and centennial? Bavarian wheat and saaz?

Style: Belgian Tripel

Batch size: 1.0 gal

Boil volume: 1.2 gal

OG: 1.080

FG: 1.020

Bitterness (IBU): 32.4

Color (SRM): 4.4

ABV: 7.8%



Grain/Sugars:



1.60 lb Extra Light DME, 88.9%

0.20 lb Table Sugar, 11.1%, boil for 10 min



Hops:



0.60 oz Hersbrucker (AA 3.2%, Pellet) 60 min, 30.6 IBU

0.20 oz Hersbrucker (AA 2.9%, Pellet) 5 min, 1.8 IBU



Yeast:



Trappist High Gravity

The longer the better, but will be drinkable after a month.
I have only brewed it all-grain using 100% pilsner malt.
The stated FG is too high. This should ferment to below 1.010
