I brewed this beer about 7 weeks ago. It was February 9, 2013. I cam up with the recipe myself based on some research and modifications using beersmith2. I tasted the beer throughout the different stages because I am new and curious, I am mostly concerned with the drastic changes in the beers flavor. I do not believe it is infected but then again I am new to this. After the brew day I let it set in the primary for 3 weeks then took a hydrometer reading that was pretty close to my goal. I tasted the beer at this time and it was great! I bottled it with corn sugar and then waited 2 weeks for carbonation then put it in the fridge. I tasted it the next day, it still had a decent flavor but a little harsh. I then tasted it it a week into bottle conditioning in the fridge and it was a little more mellow but had some strong hop flavors that lingered. My mos recent tasting was last night and the beer has completely changed. I do not want to say it is bad but it seems a little bland, its almost watered down but it does have decent flavor. I am not sure how to describe it. I am more concerned with the hoppiness I wanted starting to go away rapidly! I was wondering if anyone has any ideas about twhy this is happening?
Recipe:
1 lb. crystal malt 80
12 oz. crystal malt 40
(steeped at 162F for 30 minutes, then let drain)
added:
3 lbs. 4 Oz. light DME
3.3 lbs Amber LME
Hops:
.75 oz Centennial (60min)
1 oz Mt. Hood (30min)
1 oz Willamette (15min)
.75 oz Liberty (15 min)
Irish Moss (10 min)
This gave me a hydrometer reading of 1.056 (goal 1.054)
I re hydrated my yeast 1pkg Nottingham and pitched.
My final hydrometer reading was 1.014 before I bottled (goal 1.013)
Please let me know what could have happened or what you think.
