Well the title says it all, the beer is going to be a big Black IPA with simcoe and amarillo hops. I'm aiming for a OG of 1.090 range, 1.020 FG hopefully.
My first batch, an ignorantly hopped IPA has turned out wonderful, much to my surprise. When I was pouring it into the carboy primary, I somehow managed (e.g. I'm a tard) to spill like 3 quarts. As if this wasn't bad enough, instead of leaving it be with a smaller volume, before I could REALLY think about it, I topped it back off, thus dropping my OG from 1.086 to 1.070. While I can live with a lower ABV, I was concerned that there would be too much hoppiness for the malt. But, after reading many a post here, and taking the advice of Father Papazian to heart, I decided it didnt matter.
Just cracked it open after 2 weeks in the bottle, and aside from a chill haze, it is very good. I'm sure to anyone who doesn't look upon it as an alcohol filled first-born, that the beer will just be "ok" but I'm ecstatic, and really, in the end, aren't I the only one who REALLY matters?
