Hey guys this is the second time ive attempted force carbonation in my corny keg. I used the charts and took guidelines for psi from what ive read online. its been in the keg about 16 hours now ive just had it set at 7 psi and i just now upped it to 10. Am i doing this right? of course ide like to drink it asap :rockin: haha. So let me know your opinions and help me get this figured out? much appreciated

When you say you want to drink it asap, does that mean tonight? Or can you wait a week? Can you wait 2-3 weeks? Best flavor will come if you can wait a couple weeks, but it is entirely possible to have a carbonated, yet green beer, tonight.... if tonight is what you want, you are not going to get there the way you are doing it now.

Cranking up the CO2 and shaking the keg is the fastest way. I don't like this method personally as you tend to get beer up the gas lines and then have to clean them. A happy medium between shaking and let it sit for a longer period of time at lower pressure is to set the gas to 30 psi and just let it sit for two to three days. You can overcarb with this method so you need to check it regularly after the first day. Flavor will not change though with any of the methods, dissolved CO2 is dissolved CO2. Doesn't really matter how you get there, just be careful not to overcarb.
 
What temperature is your beer at right now? That matters.

Assuming it is somewhere in the low-mid 40s, I would recommend setting it to 30psi for 24-36 hours. Then purge the keg and set it back to the 10psi you have it at now and serve. It will be semi carbonated and drinkable, then over the next 5-7 days or so the carbonation will finish up.

You can get to full carb faster by shaking your keg, but I overcarbed a keg that way once and I prefer not to shake it anymore unless its an emergency. The above method works for me reliably every time and in a time frame that is on par with my schedule.

That will work just fine! Just set it at 30 psi for 36-48 hours and then purge it and reset it for 10 psi. Actually, at 40 degrees you may want to be more like 11 or 12 psi- if you want the beer pretty well carbonated. Mine is at 12 psi at 40 degrees, and most beers are perfect!
 
^ Thanks alot all. and yooper. i was in the process of carbing and my co tank went empty cuz i had a leak. i went to see my buddy jj at the local homebrew shop and he hooked me up with a new tank real cheap. Hopefully to twelve hours or so of no gas didnt mess up my batch. i got it recarbing and it tasted real nice.
