Hi everyone,

I am new to the forum and have brewed a couple of All-Grain batches at this point. The current beer I have fermenting is a Belgian Saison and I have noticed that it seems to not have a lot of flavor and seems to be a bit harsh tasting (High alcohol taste). It has been fermenting for about 3 weeks now. My OG was 1.057 and I checked it again today and it read about 1.002. It seems like it is just about done fermenting so my question is, would it be a good idea to maybe add some spices and orange peel to it at this stage for extra flavor or possibly dry hop it and make it more of a Belgian IPA? I know my fermentation temp was a bit low for my yeast (White Labs 565 at about 70 degrees), but I am just wondering if these other additions may make it better?

The full recipe is:
9 lb Pilsner - US
1 lb Munich - 60L
1 lb - Wheat
1 oz US Brewer's Gold Hop (60 min)
.5 oz Czech Saaz (30 min)
.5 oz Czech Saaz (5 min)
Orange Peel (5 min)
White Labs 565 yeast made with starter (about 1 liter)
 
I would brew it again and ferment at around 76-78 and see if that solves the problem before you start adding stuff to it, that way you can see, or taste, what is going on.
 
I would bottle/keg it up aiming for a high level of carbonation and give it some time. I bet it turns out really good and the harshness will mellow out.
 
Recipe looks fine, so I would suggest bottling it up and seeing what it tastes like in three weeks.

I am assuming it should be done but do take gravity reading before bottling.
