Hello,


With the release of the new Fermentis BE-134 Saison yeast, I will be decicating a few brews to saisons.

If I were to use a saison yeast for a hight gravity ale, say in the 1.080.1090 range, what would the pitch rate be?

I am thinking 3 sachets for a 1.085 ale. Is it too much?

Would a saison benefit from an (slight) underpitch?

I would use 1 or 2 packs per 5 gallons. Your choice. Either will work. Three is overkill. Others will disagree with me. I don't disagree with me.

Even if OG is around 1.080, maybe a tad more?

So 2 sachets would suffice.

Would it make a diference if Fermentis or Danstar? I believe ( perhaps wrongly? ) Danstar packs less cells into their sachets, or is that incorrect?

Anyways, 2 sachets sounds like acceptable, also from the financial point of view.
