Using a 1-gallon jug for fermenting, I have enough yeast left for 2 more batches. The safale us-05 package was folded shut and put in the fridge. It will also be longer than 7 days before I brew another batch. Should I just throw out this yeast remaining in the packet that doesn't fit the manufactures directions for use, and just harvest the yeast from the bottom of the fermenter after I bottle? If it makes any difference, the next beer is going to be a porter. If at all possible Id rather not drive an hour to and back from the nearest brew shop that i know of. Please be kind, my post count (4) is twice the number of times I have brewed.

Yeah, that's what I was thinking, rather than risk the could-be-gone-or-infected yeast remaining in the package. Certainly have more than enough mason jars from moom and dad always sending me off with canned jam etc. The cake in the fermenter right now (1gal) that the beer is sitting on is 1/2 to 3/4 of an inch thick. Don't think I should have any trouble making a few starters from that. Now....time to read up on yeast cultivation and storage
 
You could...

1...make a starter
2...pitch the yeast remaining in the packet
3...pitch some of the slurry from the previous batch

I would opt for 2 or 3, or a combination of both...I think any of the three would work FWIW...welcome noob:mug:
