Hi all,
I brewed a batch of golden ale using US-05 yeast at about 59°f, which went quite well for about 6 days, from 1050 to 1010 and then at the 7th day I'm getting some kind of strange smells. Would it be the yeast by-products that need to be re-processed, like diacetyl? or fermentation has finished and it's wild yeast that has got in?

Characterization of the "strange smells" would be helpful. Can you pick the character off this wheel?

Don't judge your beer by what's coming out of the FV. While many times they are good smells, they change throughout the time your beer is in the FV. Sometimes they aren't so great smelling. Yeast are still doing stuff even after the fermentation is over.

Wait till it is ready to pour in a glass and drink. Even then, you might find the beer you pour a month later than that first pour is even better.

I saw that this is your first post and was gonna do a "Welcome!" message, but since you've been here a while, I'll instead ask about the part of your question you left out: Is this a brew you have made before and it smells different than expected this time? My favourite mild always goes through a day or so of a quite off-putting smell, but then clears up nicely, so if this is a first time doing this recipe, it's probably no big deal, if it's a first time smell on a repeat of a recipe you're familiar with it may indicate an issue. Which is it?

It is quite normal for a 7 day old ferment to smell and taste not so good when you open it up. Rack it down to kegs or bottle, or give it some more time to settle. Remember not to open it up too much or often, post brew oxidation is not your beer's friend.

I've racked a lot of week old brews that did not smell or taste that good at the time, and, but this is normal. Let the yeast settle out and the hops mellow with age, and usually everything is OK or better.

Could a wild yeast or infection got in there and ruined it? , perhaps,.. but I would not judge it until at least the suspended yeast has been crashed.
