I have been searching (in vain) for a good Rogue Chocolate Stout clone recipe for a while and have not seen any that I really wanted to try. Until, I opened my mailbox today and saw the latest BYO issue with American Stout in bold letters on the cover. I was like "Hells Yes". Even better was an American Stout "style profile" by Jamil with a Rogue Shakespeare Stout clone recipe. Too bad for me it is an all-grain and I am an extract/partial-mash full boil brewer. What is the proper way to convert an AG to extract? Also the AG recipe calls for a 90 min boil. Would that be necessary in an extract full boil? And or if anyone has a tried and true extract version of this that could work too.
 
You can use a program like beersmith to convert allgrain recipes into extract. For the longer boil, I'd just put the extract into the beer in phases instead of all at the beginning to avoid over carmelization.
 
Ok. So like maybe just start with the steeping grains and water ay 90 min then add the extract at 60? I don't have any experience with 90 min boils. Also, in the recipe I'm looking at the first hop additions aren't untill 60 min so that makes me wonder what a 90 min boil is for. Any one clue me in on that?
 
The 90 minute boil may be for a full boil. I usually put extracts in 50% at the beginning and then the other 50% halfway through the boil. It helps avoid the "extract twang".

What is an extract twang? I'm still very new to homebrewing.

Extract Twang although sounds like a honky-tonk band, is the slight off flavor a lot of all grain guys say that extract beers have.

Can you describe it? Is it metallic or chemical or what?

I've never had an all grain homebrew :'(
 
I'm no expert on this but...Extract Twang is usually described as a sweet syrupy flavor . And/or can be caused by using LME that is not fresh. Or doing a partial boil. Some one back me up here. I've never had this problem (that I know of) but you can do a search on the forms here to learn more.

No, but I did come up with a partial mash recipe that turned out pretty decent. I can share it with you just don't have it handy right now.
 
Here you go:

6.31 gal boil for 90 min

1.5 lb crystal 120° -90min
1.5 lb chocolate -90min
1.36 lb pale 2 row -90min
1.36 lb flaked oats -90min
.21 lb black barley -90min

4.5 lb Pale Golden LME -60 min

1.0 oz cascade 5.5% -90 min
1.0 oz cascade 5.5% -60min
1.0 oz cascade 5.5% -30min
1.0 oz cascade 5.5% -flameout

Yeast wyeast rogue pacman (pitched a two liter starter)

O.G. 1.058

The grains were mashed at 154°F for an hour then collected my wort added enough water to bring to approx 6.31 gal and started my timer for 90 min.

For the Chocolate:
After two weeks I racked onto 4 oz. of Cacao nibs I had soaking in 4 oz of chocolate vodka. The chocolate taste was just a little at the end right before the bitterness of the hops. Next time I am going to try 6 oz of nibs and leave out the chocolate vodka. Good luck let me know what you think.
 
This sounds like a great recipe! My only problem is I don't have a boiling pot big enough to do 6.31 gal. How big of a pot are you boiling in? How many gallons did you end up with after the boil? Do you think I can scale the boil down to 3 gal and top off the rest?

I have a converted keg as my brewpot I think it is about 15.5 gallons. I ended up with a little over 5 gallons when done. If you can't do a full boil I would add the LME even later like last 15 min and maybe up your hop amounts on the additions because of utilization. It would take some figuring but if you use something like beersmith that should take alot of the guess work out Remember if you plan to do a 90 min boil to adjust your beginning water amount because of boil off.
 
can the chocolate extract be added straight into the secondary or should i boil it with a little water first?
