I know this subject has been talked about before but I cannot find a clear answer. I am in the process of building a single tier rims cart. I will be using a keggle with a false bottom for my mash tun. Where is the best place to monitor mash temps. I have read the best place is right at the ball valve but I'm not sure how to accomplish that. Any help would be appreciated.
 
On my HERMS I have probe half way to center of my MLT, this is my target temperature.
I"m adjusting PID according to that temperature but I also monitor MLT input temperature. I"m trying not to exceed this temp. it too much, but that is important only for first 10-15 minutes since after that temperatures on top of mash and in the middle pretty much equalizes.
 
+1 for locating the primary temperature monitor at the outlet of the RIMS tube. If you measure anywhere further downstream or in the bed, you run the risk of overheating the wort and denaturing the enzymes prematurely. This will result in a wort that is starchy and has low fermentability. That does not make for good beer.

If that primary temperature monitor is driving a PID, the wort will definitely be overheated unless the probe is located just downstream of the heater element.

Having extra thermometers in the mash bed or wort circuit is a good idea so that you can assess how the rest of the system temperatures are moving.
