Rims system as a double boiler?

So I have a rims system and was thinking of using it with plain water as a temp controlled double boiler for cheese making. How bad or great of an idea is that?
 
It's a great idea. I use an immersion cooker (e.g., Anova) which does the same thing in a much more compact package. They one I got, Gourmia brand, works fine and is far cheaper than Anova (and no phone/bluetooth needed, for gawd's sake).
